Memaw's Pound Cake with a Cranberry Twist and Lemon Glaze

This week, Erica Price Patterson shares her version of Memaw's pound cake recipe.

Memaw's Pound Cake with a Cranberry Twist and Lemon Glaze

Ingredients

Cake
1 cup oleo (butter)
2 cups sugar
2 1/2 cups flour
5 eggs
1 tsp vanilla
1 tsp baking powder

TWIST!!!
add 1 cup dried cranberries

Glaze
1 cup powdered sugar
2 tbsp lemon juice
(add more sugar or juice or water for a thicker consistency)

Instructions

Cake
*Preheat oven to 325 degrees.
*Grease and flour tube pan (bundt pan).
*Mix all cake ingredients, except for cranberries.
*Fold in cranberries.
*Pour into tube pan.
*Bake for 60 to 75 minutes, 'til toothpick comes out clean.
*Cool cake in pan on wire rack for 10 minutes, then
*Turn cake onto plate/serving plate.

Glaze
*Heat powdered sugar and lemon juice in a small sauce pan over a low heat 'til smooth and with the consistency you want.
*Allow glaze to cool 'til it starts to thicken, then
*Pour glaze on cake.
[If you pour glaze on cake while it is still hot, it will just run off the cake!)

Wall Calendar

Check out this great wall calendar that my daughter-in-law, Jenni, and my daughter, Tara, made for their families.
Materials needed for wall calendar
     *Spray-on chalkboard paint
     *Painter's tape
     *White paint pen
     *Chalk markers
Tape off area you want to paint.
Spray paint (2 coats might be necessary)
Allow pain to dry
Draw lines using straight edge and white paint pen
Write days of the week with white paint pen
Use chalk markers (can purchase at Hobby Lobby or Michael's) to fill in everything else [Chalk markers only wipe off with water.]
